Wine making secrets

 

 

Winery Dionis LLP is located in one of the most picturesque areas of the Trans-Ili Alatau in the valley of the Issyk River. The Winery entered into history since 1974 having its own vineyards with an area of 168 hectares, where white and red commercial grape varieties grow: Rkatsiteli, Aligote, Riesling, Pinot, Saperavi. An exclusive microzone of the Trans-Ili Alatau foothills promotes the cultivation of environmentally friendly grape varieties.

 

 

 

 

 

 

In Kazakhstan, winemaking originated in the early 50s. and it developed quite successfully and had good prospects. The experience of Georgia, Moldova, and Ukraine was widely used to establish the industry. All the achievements of the famous Magarach viticulture and winemaking institute in Yalta were brought for the benefit of Kazakhstani winemakers. And, of course, there are favorable climatic conditions for growing grapes in the south and in the Trans-Ili Alatau foothills.

Qualified specialists with experience in the wine industry for at least 20 years have been working at Dionis Winery LLP. Winery produces good natural dry, semidry, semi-sweet wines, as well as cognacs. All manufactured products of the Winery are made of environmentally friendly grape varieties. The uniqueness of the production methods allows to preserve the natural composition of the mineral elements contained in the grapes. Wines do not contain dyes, flavors, sugar-containing products or any preservative substances.

Since 2000, global changes have started at the Winery. The Winery has been equipped with modern technological equipment from Italy and France, this is a bottling line for 6000 bottles per hour and Triblock Bottling Line for 3000 bottles per hour and Souvenir Line for 1500 bottles per hour, which made it possible to improve product quality and increase plant capacity. A French industrial-press, which processes grapes using a high-end technology is installed in the Plant. It does not cut grapes, but squeezes grape juice out of berries without breaking the pips. Owing to this equipment and the professionalism of the workers, the plant produces wine materials of the highest natural quality.

 

 

 

Dionis Winery LLP can:

• produce fruit and berry wine materials;

• hroduce grape wine feedstocks;

• distillate wine materials with KU-500 devices;

• produce cognac and brandy.

 

Procure extra raw materials from other regions.

Cognac and brandy are produced in a stock room provided with ventilation, sewage and primary fire extinguishing equipment. Brandy alcohol is used to prepare Cognac and is matured for at least three years on oak chips, while brandy is aged on oak chips for less than six months where softened water, sugar syrup and coloring are used. The process of making brandy and cognac is as follows: distilling and storing brandy spirits, preparing blending materials, blending of brandy or cognac, fining (if necessary), filtering, after blending rest, heat and cold processing, filtration and bottling. The filling is strictly done in the new bottle. The process of making wine is very time consuming. But everything is well established, the staff works smoothly as guided with the elaborated procedural instructions.

 

 

 

 

 

 

Since November 2015, Ilgar Mazailovich Bagirov has been the president of the Dionis Winery LLP. He was born in Chu of Dzhambyl Region, in 1991 he graduated from the Almaty National Economy Institute with a degree in Finance and Credit, between 1991 and 2003 he worked in the tax committee for Zhetysu District of Almaty.
